EVO - Grappa Riserva

EVO is a grappa (distilled grapes) that is legally defined as a “riserva” because it ages for more than 18 months in wooden barrels. The barrels used are various types of wood barrels and not necessarily from the first cycle.

Each type of wood individually helps give the product a specific feature. Based on the various vintages and the natural and unpredictable maturation of the product during aging, EVO can have slight differences in colour and aromas. This helps further celebrate the absolute authenticity and artisanship of the product. EVO does not contain any added dyes. Its “nuance” is the result of barrel aging. The methods to process the containers and the various types of woods used give this distillate unexpected organic substances and colorants. Thanks to the new processing techniques, EVO has a very limited amount of essential oils (“traces”) encouraging the drinkability and increasing their digestion and has a quantity of methyl alcohol that is at the lowest legal limit.

  • Colour: intense brown with amber glints
  • Nose: The nose picks up on hints of raisins mixed with liquorice, walnut, cinnamon and vanilla. A “sweet” aroma of ripen dates, crème caramel, “torrone” and carob further characterize the elegant bouquet. There is no alcoholic “pungency"
  • Taste: fine and intense with overtones of spun sugar, vanilla, ripe plum and hints of citrus. A complex and velvety taste
  • Finish: tones of dried fruit and hits of spice are gently overcome by a pleasant alcoholic sensation. Regal finish.

    The unique feature of FUMO is that it marries with the strong, smoky personality of peat (pomace is smoked prior to distillation) with the smoothness of cherry. FUMO is a blend and is the result of combining several spirits from different types of grapes and vintages. Each type individually helps give the product a specific feature. FUMO can differ slightly in colour and aroma from batch to batch and there could be slight sedimentation due to its originality. This helps further celebrate the absolute authenticity and artisanship of the product.

There are also undertones of spiced speck rinds. There is no alcoholic “pungency”Taste: persuasive and unique with overtones of ripe fruit, honey and vanilla. There is a surprising smoked flavour that “appears” after you swallow, creating a true culinary experience in your mouth
    • Finish: significant presence of ripe plum, dried fruit and hints of spice. The alcoholic sensation is stimulating but soft and fascinating. Regal finish

    DWine is the result of the double distillation of different wines from the area of Treviso. Each single grape variety retains its own sensory characteristics, yet a perfectly balanced assemblage is achieved. The double distillation process used allows for a particularly elegant and pure grape spirit to be obtained, making it inimitable and unique. The next phase is ageing. Its duration is gauged on the transfer of tannins and lignin. The distillate is placed for six months in medium oak casks, then finishes the ageing process in casks made of different woods. These special woods (chestnut, cherry) give DWine an intense, amber colour and unique aromas.

    • Aging woods: casks in different native wood species. Oak, Chestnut, Cherry
    • Aging time: close to five years
    • Colour: vibrant brown with amber hints
    • Aroma: notes of dried grapes mixed with hints of liquorice, walnuts, cinnamon and vanilla. A “sweet” aroma of mature dates, crème-caramel, nougat and carob further characterise the elegant bouquet. No noticeable alcoholic “pungency”
    • Palate: delicate and intense, with hints of candy floss, vanilla, ripe plum and citrusy notes. A complex and velvety palate
    • Finish: hints of dried fruit and spicy notes are softly enveloped by a pleasant sensation of alcohol

    Nothing goes better with EVO grappa than a good cigar. That’s why we’ve come up with a better way to package them that is an alternative to the traditional decanting (from the bottle), makes it easier to pick products from the line or make small “tastings” and allow for the creation of “different,” modular and intriguing gift boxes.

    That’s why we’re playing with tools of the cigar trade by using an “anilla,” cigar cases and humidors in various formats. An EVO cigar is an individual glass tube (5 cl) with just the right amount for a glass. They are sold in wooden cases containing 100 cigars of all three kinds or box containing 36 cigars (mixed or single-product).
